Should I build a custom theme or customize an existing one?

What's the difference between Shopify headless and a standard Liquid theme?
A standard Liquid theme runs on Shopify's servers and is rendered server-side on each request. Headless gives more flexibility but adds complexity and hosting costs — it's not always the right choice.
